1⅔ cups (14 oz/400 g) plain unsweetened skyr
½ cup (4 fl oz/120 ml) low-fat milk, lactose-free if needed
¼ cup (1.6 oz/45 g) chia seeds
2 kiwifruit, approximately 5.3 oz/150 g edible portion
2 tablespoons (0.5 oz/15 g) unsweetened cacao nibs
1 tablespoon (0.35 oz/10 g) hemp hearts
¼ teaspoon pure vanilla extract, optional
Choose plain skyr and check the label: protein and added sugar can vary considerably among brands.
Preparation
Place the skyr and milk in a medium bowl. Whisk until the mixture is smooth and evenly combined.
Add the chia seeds and vanilla, if using. Stir thoroughly, then let the mixture stand for 5 minutes. Stir again to distribute the seeds and prevent dense clusters from forming.
Cover and refrigerate for at least 4 hours or overnight.
Before serving, stir the pudding again. If it has become firmer than preferred, add 1–2 tablespoons of milk. Divide between two bowls, then top with sliced kiwi, cacao nibs, and hemp hearts.
Serving Note
Add the kiwi and cacao nibs immediately before eating so their freshness and texture remain distinct from the creamy base.
Cacao nibs naturally contain stimulating compounds. If you are sensitive to them, especially later in the day, reduce the quantity or omit them.
