½ cup (4 fl oz/120 ml) plain unsweetened soy milk
¼ cup (1.6 oz/45 g) chia seeds
1¼ cups (5.3 oz/150 g) fresh or unsweetened frozen blackberries
3 tablespoons (0.7 oz/20 g) unsalted pepitas
½ teaspoon ground cinnamon
Finely grated lemon zest, optional
Use plain, unsweetened soy yogurt and soy milk, then compare labels for protein and calcium.
Preparation
Combine the soy yogurt and soy milk in a medium bowl. Add the chia seeds and cinnamon.
Stir thoroughly and let the mixture stand for 5 minutes. Stir again to distribute the chia seeds evenly.
Cover and refrigerate for at least 4 hours or overnight.
Before serving, stir once more and divide between two bowls. Finish with the blackberries, pepitas, and a small amount of lemon zest, if desired.
Serving Note
