Spinach and Feta Rice Bakes

Chopped spinach and crumbled feta bring leafy greens and a savory flavor to individual rice bakes.

Equipment: Four oven-safe 1-cup (250 ml) ramekins and a food thermometer.


Why it works

A partly used package of feta can give rice a more pronounced flavor. Crumbling it distributes that flavor through the mixture, while squeezed, chopped spinach adds the greens. Feta also supplies sodium, which is already included in the estimate below.

Squeeze the spinach thoroughly and crumble the feta into small pieces so its flavor reaches more of the mixture.

Ingredients

For 2 servings

Rice bakes

  • About ⅔ cup (120 g) uncooked white rice

  • 7 oz (200 g) washed, trimmed spinach

  • 2 large eggs, about 100 g total without shells

  • About 2 oz (60 g) crumbled feta

  • About 2 teaspoons (10 g) extra-virgin olive oil, half for the mixture and half for the ramekins

  • A little salt only if needed

Side

  • 7 oz (200 g) trimmed green beans

  • About 1 teaspoon (5 g) extra-virgin olive oil

Weigh the spinach after trimming and before cooking. The rice quantity is its dry weight.

Preparation

  1. Prepare the rice and greens. Heat the oven to 350 °F (about 180 °C). Cook rice according to the package. Wilt the spinach in a covered saucepan with the water clinging to its washed leaves. Cool enough to handle, squeeze thoroughly, and chop.

  2. Mix gently. Combine drained rice and spinach and let cool briefly. Add crumbled feta and 5 g of oil. If you want to assess the seasoning, taste at this stage, before adding the raw eggs. Add a little salt only if needed, then stir in the beaten eggs.

  3. Bake and serve. Grease the ramekins with 5 g of oil and fill, leaving room below the rims. Bake for 20–25 minutes, until the centers reach 165 °F. Steam or boil the green beans while the bakes cook and dress with the final 5 g of oil. Rest the bakes for five minutes before serving.

Serving notes

Break the feta into small crumbles so it reaches more of the mixture.

When starting with freshly cooked rice, refrigerate finished leftovers promptly, ideally within an hour after baking. Use within twenty-four hours and reheat only once, to 165 °F.

If using previously cooked rice that has been stored safely, baking already counts as reheating: serve promptly and do not plan another reheating.

Useful substitutions

  • Use the same trimmed weight of Swiss chard, cooked and squeezed well, instead of spinach.

  • Plain frozen green beans can replace fresh; cook according to the package.
