White Bean–Stuffed Potatoes

with Tahini Sauce

Everything you need for two servings: one filled potato and a carrot side per person. Check what you already have and buy only what’s missing.

Fresh vegetables and herbs

  • 2 potatoes — about 9 oz (250 g) each

  • Carrots — 7 oz (200 g), weighed after peeling

  • Chives — enough for 1 tablespoon chopped

  • 1 lemon — enough for 1 tablespoon (15 ml) juice

Canned goods

  • Canned cannellini beans — enough for 8½ oz (240 g) after draining and rinsing

Pantry

  • Pure tahini — about 1½ tablespoons (20 g)

  • Extra-virgin olive oil — about 2 teaspoons (10 g) total, divided between the filling and the carrots

  • A little salt, optional

You will also need ¼ cup (60 ml) water for the tahini sauce.

Optional substitutions

  • Other canned white beans instead of cannellini — use the same drained, rinsed weight of 8½ oz (240 g).

  • Chopped parsley instead of chives.

Luca’s note

The bean quantity refers to the drained, rinsed weight. Check the can’s drained-weight information when shopping.

Choose pure tahini and stir the sauce thoroughly as you gradually add water. If it thickens at first, keep stirring until it becomes smooth and pourable.
